CrankyBuzzard this looks really good.  I bought lumber yesterday and am in the process of constructing my smokehouse.  I'm fairly new to making sausage, but just picked up some brat casings yesterday.  I see you are in TX.  Do you have any good TX red hot sausage recipes?  Living in OH I've never had them before, but they look tasty and I would like to try.
