When I was looking for an appetizer to go with a couple of chuckles I was smoking for pulled beef, I ran across this and had to try it. It starts out like a jalapeño popper, with chili stirred into the cream cheese/shredded cheddar/BBQ rub that fills the jalapeño boat. My wife had just made a batch or her favorite chili, so the timing was fortuitous. Next, a cocktail frank or lil' smokie is pressed into the filling, then the entire thing is wrapped in crescent roll dough, each triangle having been cut in half to wrap two poppers. Smoke until the dough is golden brown.

I didn't bother to get pics of the chuck roasts or pulled beef, but a cajun beef po boy that we made with some of the beef is seen in the last photo.

The contrast between spicy jalapeños, melty cheese, and savory chili feels well thought out and crowd-pleasing, especially for casual dining or game-day menus. Dropping something unexpected like in n out breakfast menu into the mix highlights how playful and experimental food mashups have become lately.

That all looks mighty tasty. Im gonna have to remember that popper idea.👍

Looks really good from here. Nicely done. I wonder if wrapping the popper in thin bacon would work or add anything.

Point for sure
Chris
