Made Jagerschnitzel yesterday and I have to say it came out pretty darned good. Started with a smaller pork tenderloin that I sliced fairly thin like 1/8".

They did not need much pounding to make even thinner and to tenderize.

They need to be breaded and fried up, I am not sure if it was here or not but I wanted to sub in pork rinds for the bread crumbs. Amazon was expensive so the wife found me a small bag to test this out.
Into the processor they went, I did add a little pepper to the mix.

Pulsed a few times to get it to a panko like consistency.

This is the messy part, flour, egg, crumbs....I should have used carbolous flour but did not think about it until too late.

Of course any good German meal needs a side of red cabbage, I opted to use mashed cauliflower instead of potatoes as well as air fried brussel sprouts. Also made a great hunters mushroom gravy to go on top.

Have to say the pork rind crumbs were super crispy and tasted great, I will be using them again. The meal was fantastic, I want to try the crumbs on wienerschnitzel next.
Usually the non keto version looks like I did a few weeks ago with spetzel, but the diabetic side of me needs the alternatives.

Never thought about using pork rinds as a sub for bread crumbs or flour...I will keep that one filed away
They were way better and more crunchy than regular panko...plus zero carbs and less fat than regular panko.
 
Good lookin meal . I do " bottom of the bag " coatings from time to time .
Why no one eats the last handful of chips or what ever is a mystery .
Good idea with the pork rinds . Never would have thought of that .
Nice work .
 
That is one all around great looking cook! After 20 years of having docs tell me I was "pre-diabetic" I crossed the line a few weeks back, no meds just more exercise and diet. Takes some getting used to, I still like my whisky before dinner. RAY

yeah it sucks, I failed a life insurance exam when I was 37 (now 55) so that is when I found out. I have been anywhere from 5.7 to 9.8 on the A1C scale. Since February I am dowm 35lbs and about to drop below 6 A1C. Already losing some of the meds.
 
Good stuff man! I have used them from time to time in my keto meals as well. Your meal looks fantastic. We love cauliflower mash and eat it often. I ordinarily do 50/50 cauliflower / turnip now. I think I’ve posted my general recipe and process

I remember that, what does the turnip add to the mashed? I also think you where the one that mentioned the pork rind panko, If so, a huge thanks!

I think the turnip helps with the texture being thicker and creamier. Not sure if I mentioned the pork rinds or maybe was Brian who posts keto stuff. I’ve posted a TON of keto stuff here including desserts.
 
It looks delicious! Will have to show this to my BIL, he just told me he is diabetic now.

That is a fine looking plate of food! Jager schnitzel is a favorite of Bev's. Seeing this reminds me it's been too long since I made some. I annoyed her yesterday and could use the Brownie Points.😜👍...JJ
 
That a great looking meal Cliff. I having a heck of a time getting back to low carb. Took what was suppose to be a week off. Once you do that hard to get the ball rolling again. Afraid to check BS right now. I have been using these.

I have a tenderloin in the freezer I've been wondering what to do with. Now I know.
I never thought about using pork rinds for breading but it sounds good.
I'll pick up some at one of the Mexican groceries down the street.
We're watching the salt and packaged stuff all seems loaded with it.

Thanks, you must have been the one who mentioned this. I can't find it jarred locally and Amazon was expensive. We just took a $.99 bag of pork rinds and put it in a food processor, a blender would probably also work.
 
I don't do keto, but subbing pork rinds for bread crumbs sounds like it could take schnitzel to the next level of crunchy deliciousness.

Where did you buy the spaetzle maker?
