Picked up a rack of spare ribs last weekend and had only a couple of hours before the start of the LSU and FSU college world series game so I decided to try something different with them. I had watched the BBQ Pit Boy's video for Jack's Ribs using country style ribs and thought that would work for spares. I cut the spare into individual ribs placed in to an aluminum pan and seasoned with rub. Then poured three bottles of Jack Daniel's Original #7 BBQ sauce and 3/4 bottle of Abita Amber beer(your favorite dark beer will work) drank the rest and a couple more.. Covered with aluminum foil. Placed over direct heat using only two burners of my gas grill. Lifted one corner of foil after twenty minutes to check if sauce was at a boil and to see if I was using enough heat on the burners. Closed foil and let simmer in a boil for another hour. Opened and checked for tenderness. When tender to your liking removed from pan and placed on grill for a couple of minutes to crisp. Not as good as smoking for four hours on smoker but was very tasty and tender and great way to fix ribs if pressed for time. Should have taken more pics.

Pit Boy's video??? Makes this sound like something new. That rib cooking method is older than dirt. As long as I have been alive, 55 years, Mom made ribs like that in the Oven. Good House Keeping recipes helped mix it up. BBQ Sauce, Soy Sauce, Wine, Garlic and Ginger, Apricot Preserves and Catalina Salad Dressing. Were just a few. It works. Your combo looks good...JJ

It's older than 55 years. I'm 67 and MY Moma made ribs this way. So it's even older than me. This cooking method probably goes back to Neanderthal man.

Didn't say it was something new, just something I saw and tried it out on spares and turned out alright.
