Tonight, I'm goinna smoke a 3 lbs salmon that I got from Costco's.

Gonna keep it really simple.

No Brining; lemon pepper, dill, cajun seasoning and olive oil.

Gonna use cherry wood and will smoke it in my GOSM smoker at 225 degrees. I'm sure it's gonna be awesome.
 
We love salmon, I'm sure yours will be awesome!

I have 45lbs of cheese to smoke tonight. Gonna throw some ribeyes on the little Weber kettle too.

Doing a brined chicken today and a Big ol Brisket tomorrow that I got at Sams club this morning...
 
Salmon is almost done. it was about 2 lbs. no brine. pepper on salmon, basting with maple ginger glaze. Q view coming soon!

PRIOR TO BE DONE, I GLAZED IT WITH MAPLE SYRUP.

You should have seen the look on Tracy's face as she ate the syrup.  Finally, I won't be in the dog house.  lol

Only problem is, I used the Taylor probe and it was difficult getting an accurate reading. 

But, i'm still impressed.
