I have the CharGriller Pro fired up, and waiting for temp to stabilize. My Butt is rub down and ready.

Butt is in the smoker.

 the smoker is latched down till sunrise,

 

and the Thin Blue Smoke is a rising.

Time to make the finishing sauce.

Well the sun is up, time to wake my butt up with a AJ & Brown Suger shower.

Temp 155.

8 AM, Butt Temp 160, turned 180 AJ & BS spray.

9 AM Butt Temp 163, sprayed AJ & BS no pic, open/spray/shut

10AM Butt temp 164, sprayed AJ & BS no pic, open/spray/shut

10:45 BUTT TEMP 165, sprayed, wraped and back in the smoker.

Roller as I was wrapping it, a piece of the bark fell off, all I can say is, it would be worth a trip from Louisiana.

1 PM Butt Temp 188.

1:30 Temp

Poke test PASS, I didn't look just wraped it up and put it to bed. 7.6#s 12 hours in the smoker.

After 3 hours resting, the bone didn't pull out, it fell out.

It pulled perfectly.

 

I'm now a finishing sauce believer.
