It's Monday and a Fattie is in order.

  1. Got off early today and was encouraged by reading the fattie forum to give it a try. Chopped up a white sweet onion, shitake mushrooms, red bell peppers and some pepper jack cheese.   


    Spread some Gazpacho salsa around and covered it with the veggies after I cooking them a bit.


    Just going on the smoker.  I'm using grape wood for the smoke. Sprinkled a little sweet mesquite spice on top.

  4. Still on the smoker at 158 degrees.  I put some mixed baby potatoes and red onions in a iron pan to have with the fattie.  They are cooking in bacon fat with a little salt, pepper and thyme.
