Wanted to do something different and had half a pork loin left after tacos last week. Thought about the prosciutto and sausage stuffed loin but figured why not go all out for my Italian bride. So cream cheese, spinach, prosciutto, salami, and capicola. Seasoned with Italian seasoning and salt, then smoked with hickory and cherry. Turned out pretty good.
