Today is my off day and just so happens to be one of the coldest days in Georgia. I decided that I wasn't going to let that stop me from smoking a Butt so last night I bought one, trimmed and salted it up and this morning I put my rub on and threw it on the smoker .Hopefully it will be ready to go around 6:00 tonight. Also, its pretty crazy the temperature difference between an analog and digital theremometer.

 




 
After 13 hours on the smoker and grill and a burnt up back yard and a visit from the local FD, this 8# butt was finally done. Was it worth it? I don't know but it sure was good. 

Shaggy, I don't really have an answer for you. I've read that tying a Butt with baker's string helps keep it together and makes it easier when  taking off the smoker. I had no problems with it being wrapped.

Burnt up back yard and partially burnt up front yard. Hopefully I'll have some green grass this summer. 
 
 Is that "Extreme  Smoking"?
If it is, I want nothing more to do with it. What made it so bad was that had my water hose not been frozen it would've been easy to put out.  

I was adding more charcoal to the firebox and I'm guessing when I did an ember fell onto the patio and blew onto the grass. 
 
Practice makes perfect go buy some ribs or brisket and finish the grass of while you still can!
