My name is Greg and I am from northeast Wisconsin. I just purchased a Cabelas Masterbuilt 40 inch electric smoker. I have never done this before and look forward to having all of the experts on this site to show me the ropes! We have already tried baby backs on it using the recipe that came with the unit. They were awesome. I didn't know they could be that good!

MES are a lot of fun! Be sure if you're doing chicken with skin on (wings/thighs/etc) that you crank up heat to 275 and have a grill ready to crisp skin. Also look into AMNPS for good smoke control.

If you are thinking about smoking some cheese let me know!
