Infused EVOO

Wasn't really sure where to post this...

I used the following recipe that I found on the Whole Foods iPhone app the other day (hey it was free!).
  • EVOO heated to 150 degrees.
  • 1 tsp of fresh peppercorns I used Melange (spelling)
  • 1 tsp of granulated garlic
  • 3 sprigs of Rosemary fresh from the garden!
Put it all into a glass bottled sealed it up and gave it a good shake. Also popped the the rosemary with the handle of my scissors to help open it up a bit. The recipe said to let it set for a week in a cool dark place so the back of the pantry it went. I enjoy EVOO and black pepper what other flavors have you infused? First time that I have tried this at home.

I tried this recently only I didn't let it sit that long. I used garlic (fresh) and dried Italian seasoning. It was great on italian bread with some parmesan.

I always read that when infussing the oil, you can get away with less expensive oil (maybe virgin or regular)?????

I know that the quality of ingredients to make a difference and if you use the best, you stack the odds in your favor. I guess the thought of using EVOO is sorta like adding Coke to Single Barrell Bourbon.
 
We have been using infused oil for differant things. The most common is with fresh garlic just heat oil and crush some garlic with the side of your knife and let it heat for a couple of minutes and bang you have infused oil. I use it alot also with crushed red pepper flake for alttle added kick to start a meal off.
