I hope you realize bark is less a function of brand and model of your smoker/grill (stick, charcoal, gas, electric, or pellet) than cooking temperature and the amount of sugar in your rub.
I've got a GMG Daniel Boone Prime and I like it, but there were some things I had to do to it to get it to behave for me. Primarily, sealing the lid. There were gaps, so I got some RTV650 and made a form-in-place gasket on the lid that has dramatically improved heat retention and temp stability. I've also started using a water pan, and I find this helps keep any beef I cook nice and moist. I just use a disposable aluminum steam table pan and lay a separate grill over the top. Oddly enough, I only have to do this with beef, such as briskets and chucks. All the pork I've cooked on the main grate has come out nice and moist. Next mod I'm looking into is a downdraft from Dan Godke.
Smoke flavor can be a bit lacking in a pellet pooper without a supplement.... I guess I'm scared of not having that smokey flavor.

good call! I use the rec tec ultimate blend for everything. I find it to have the right flavor for me. Amazon delivers. Lots of guys use Lumberjack, but I have not tried these. Ultimate blend from cookinpellets perfect mix i have tried, good but not a strong enough flavor for me.Also thanks to everyone for the advice. I decided to go with the Rec-Tec RT- 340 .
