I have been away from the forum for quite a while, but that sweet smokey smell brought me back. So this is my second time smoking a waygu brisket. My first one was a gift, and only weighed in at 8lbs. It was so-so. This one I got from snake River farms and went with a 19lb gold grade waygu brisket. The prep was great, trimmed off 5.5 lbs gonna make delicious sausage. For seasoning, I went with my blend of s.p.g. Smoked it on my rectec for a total of 13 hrs at 225. It is honestly the best brisket I have ever made. Enjoy the photos..
