I need a new knife set.

I'm a Dexter Russell fan,particularly their Sani-Safe line.My 9" filet knife is over 20+ years with my chefs not to far behind and my 6" boning at about 15.I have other knives of course but those 3 cover most of everything I need a knife to do.Being USA made doesn't hurt either.

I'm a long time amateur butcher, sausage maker, smoke house operator. A professional cook for fishin and huntin lodges and now retired restaurant and gold camp cook. The Dexter Russell brand Sani-Safe version evolved into my most favorite knife. And I have tried a few.

Good luck with yer knife hunt jlinza!! And I pray your new knives will cut through everything you might aim one at . . other than yer own body parts.

My wife has bought a few of the more high end Swiss knife sets. They work well and are great for show on the countertop but for me and a lot of others online it seems this cheap $12 set of three from Walmart is the go to for daily uses. It is so cheap I have bought multiples mainly for the middle size. It is perfect for cutting up most vegetables and peeling potatoes or apples.

I use a pull knife sharpener that knife whores would swear at you for using but it is quick and it it wears out the knife blade prematurely who cares? It is a cheap knife. Toss it and buy another $12 set. I have not had to throw out any of these knives with many years of using them. When they get dull pull away, wipe them off and get to cutting.

The only "set" I ever bought was a Walmart level Chicago cutlery set probably considered junk by chef's standards. It still occupies a place on my counter for the 8 steak knives which I give a few swipes through the Work-sharp and steel, used for daily dinner.. However in a small block next to it I have my Brevin, Misen, and Wusthof Chef's knives I take good care of. If I had it to do over I would search for maybe a 1-3 knife set of the ones I use regularly such as some of the "Famous-makers" mentioned above.

Welp its that time. Our current knife set has handles that have a rubber type coating thats starting to fall apart on a few knives. Thinking it might be time to just go ahead and get a new set.
Figured I'd see what the A team recommends.... this post is now open to enablers....
