I have a slaughterhouse close by that will set me up with pork fat anytime I need it. I usually get a large bag of it and render some into lard, and slice the rest into small strips and freeze in 1lb bags for sausage making but never thought to ask about beef fat.  Excuse me, I have to go make a phone call..........

No kidding.... I always get charged and have to be there the same day they are cutting... they won't put it in the freezer... must be a food safety deal...
