You will love it.

I got 4 retired air filters from motor graders at work, the interior and exterior of the air filters are made with stainless steel mesh. The exterior mesh measures 16 1/2" X 33 1/2". I am going the take a crack at making one.

I'll be ordering one within the next couple of weeks, too.  I've heard nothing but good things about it, and it's gonna make things SO much easier with my MES!

I agree that it is a nice unit - check his new list of sawdust too - he has a bunch of new flavors he just got in - I got to sample some and there are some very cool ones - wine barrels whisky barrels - peach- apple and more

rbranstner, I have about 10 smokes onmy test unit and love the thing. I have smoked, deli meat for lunch meat, pecans, almonds, walnuts, pepper Jack, Gouda, swiss, cheddar, mild white chedar, Colby Jack and Salmon before I grilled it. All came out amazing with no bitterness.

I just received the new improved model for testing and posted it in the thread below as I didn't want to Hi-Jack your thread. If your interested in whats new and available pop on over to the link below.

Check out the variety of sawdusts I will be testing.

Yea I thing I picked out four bags of different flavors of sawdust to try. Todd suggested the Peach so I am really looking forward to trying that.
I used the peach as my smoke generator for a chicken I just did last weekend and loved it - you might want to put the dust in the oven on low for about 30 min to help dry it out a bit - I had to relight it a couple of times

You can also put the dust on a paper plate and microwave for about 25 seconds, that worked great for me today with my cold smoke. I'm thrilled with Todd's smoker. I do kinda wish now that I got the bigger one though. I'm really enjoying trying out his different dusts. The coconut I smoked today was unbelievable! Think outside the box with this thing, I'll probably smoke my socks before it's all over! LOL!

Maybe there should be a dedicated thread for "Cold Smokes" in the forums as I am seeing alot of different threads about it under different headings. It would keep it all together! Jeff? Please, please, pretty please?

I will echo what Squirrel just mentioned. I was thinking about that last night when I posted my cold smoke. I bet our resident Chilehead / Super moderator (Richoso1) can make that happen. :-)

That sounds like a reasonable request, I'll look into that real soon, and give you a reply ASAP. It's all good my friend.

Here's another vote for cold smoking, no matter what technique is used.

Now, I wish you all would quit praising the A-Maze-N-Smoker.  I'm toughing it out, waiting for Todd to release the 8 x 8 so I can get busy.  I'm hitting the road this summer with the travel trailer and the smoker is going with me, of course.  Yes, I'm the SOB that makes others wish they'd brought theirs.  The A-Maze-N-Smoker would really a boon to the cause.

I like the 8x8 much better then the 6x6 as it will provide greater flexability. That said... They both do a quality job.

I too was one of the beta testers for the 6x6, and have been busy with a lot of other stuff so haven't posted my review yet.  However if you need a recommendation.  BUY IT, BUY THE A-Maze-N-Smoke!  Todd has developed a great product.

I heartly agree the 8x8 for me would be the way to go, a lot more flexible, and there should be more smoke.  My one issue with the 6x6 is that with one end lit, the amount of smoke is a marginally enough, so I usually light both ends which cuts smoke time down to about 2 to 3 hours.  With the 8x8 each channel is wider thus more dust/chip and should mean more smoke.

The A-Maze-N-Smoke, really is a big plus in a MES smoker.

• It solves the issue of having to add chips every 15-30 minutes, the 6x6 gives 2-5 hours of smoke depending on if one or two ends are lit.

• The MES now works as great cold smoker with the addition of A-Maze-N-Smoke.

If you have been waiting to buy a A-Maze-N-Smoke because your not sure, well I haven't smoked anything without using the A-Maze-N-Smoke since I received it.  Why?  It works!
