I am out of smoked cheese

So it is August here in nj like 85 all th time and I am out of smoked cheese. I'm think if I take a bag of 10 lbs of ice put it in a aluminum pan then put plastic wrap on it then add the cheese on top of it add the smoking tube for 4 hours it should be ok ...
Maybe wait for sunset .. Ideas?

Anything can work. As long as the ice is below the cheese you should be good. Make sure nothing drips on the tube.

If you have 2 grates in your offset, put the cheese on the top rack & the ice pan directly under it.
