I decided to stick a 4.5 lb pork butt in my smoker to see what would happen (1st time). Rubbed her down with mustard and a slightly sweet rub, then sealed her tender fate with an injection of 1 part soy sauce, 1 part italian dressing, and 1 part worcestershire sauce.
Set her on the pre-heated el cheapo at about 6pm sunday night, 2 chimnies full in the pan along with some apple wood, and we hung out at around 225*. The plateau came around 10pm, i added some coals and settled in.
Around 1 am, the plateau broke, and I wrapped at 158*, set her back on with an alarm to go off at 196*.
I spontaneously awoke at 4am, sensing...something. Just like waking up 2 minutes before your alarm in the morning, I was up at 194*, just in time to approach my rig right as my alarm went off :) I brought it in, let it sit for 45 minutes, and took a look: it was like christmas morning when you were 6 :)
I think I'll hold off injecting this cut next time. I'd always wanted to try it, but I don't think it needed it. It couldn't have been easier to pull apart. Bone practically fell out when i touched it. :)
