Hello all. I'm from the Capitol Area in NYS.
Little background: Love hunting, camping, fishing, cooking, and eating. Preferred method of cooking - Low and slow over campfire coals. Second method as of a few weeks ago - smoking.
Picked up a vertical charcoal smoker about a month ago. Masterbuilt. I know not top of the line, but I like it so far. Only used it twice, ST. Louis pork ribs, a pork loin end. Both came out great, but if I had followed the recipes on some sites, the ribs would have been over done. So, after looking around, I really like the information on this forum, so I joined.
There's a learning curve as I expected, and trying to dial things in. Nothing wrong with a challenge. I may ask some questions that may seem stupid or silly, if so, I do apologize, rookie smoker here.
Sorry about the actual ribs separated pic, it's blurry but can still see the nice smoke ring.

Welcome smoke'n'beer hello from a neighbor here in PA. (Pennsylvania). I'm a new smoker myself bout 2 months. I've done an insulation mod (BBQGaskets.com) also just today I extended my chimney inside my barrel grill down to my cooking grates to maximize a more steady heat and even temps and create a longer coal burn from the firebox. Here's couple pics--first chimney extension and 2nd and 3rd are insulation mod to firebox door showing outside and inside 20171014_173143.jpg 20171004_123941.jpg 20171004_124002.jpg

Thank you for the welcome's and kind words about the ribs. Have a small eye-round roast in as I type this. Hoping I don't screw it up. LOL

I did up some bbq'd chops today and 2 pans of mac and cheese. If I'm going to fire up the smoker then I'm definitely doing more mac &cheese lol. I used a mix of my fav spices for my dry rub and bbq sauced them towards the end of smoke time here take a look..
