Got the bug to smoke sausages last fall.
Have a couple batches of venison snack sticks under my belt.
Bought a Big Chief smoker since I don't plan on hot smoking right now. When I want to do that I'll pull out the little brinkman.
Did smoke some cheese last weekend. Wow! What have I been missing! Much better than any store bought smoked cheese!

I was born and raised near Van Buren East of you a ways. Wish there were more of us forum members in the Ozarks so we could have a get together someday

Just saw this. I'm making my very first batch of Disco's Snack Sticks.
Getting me to start another vane of meat prep, like making meat sticks, is a tough drag.
I'm real skeptical and decide slow. Then when I do decide. I tend to just jump in.
The Big Chief Smokers have a respected place. My Son-In-Law has two at his place and uses Alder off their property to smoke Salmon when they can catch some.
You'll find a wealth of stuffers here. Guys who really know their way around.
