I'm Devon, and I live just outside of The Classic City, Athens, GA... Home of the Georgia Bulldogs! Woof!
I've been smoking for 7 or 8 years now on two different upright, front loading, propane fueled smokers... first a smoke vault, and then a smoky mountain. I enjoy smoking anything and everything, but I typically focus on butts, pork loin roasts, wings, chicken thighs/breasts, turkeys, and even tofu (for my vegetarian child). I'm not scared to experiment.... my favorite experiment to date has been smoked brussels sprouts.... YUM. I've never attempted a brisket, as the dimensions of the uprights really don't lend themselves to that large a piece of meat.
I really enjoy creative processes. I've been homebrewing (beer, wine, mead, cider, etc) for 20 years, and smoking is another way to satisfy the same creative needs that brewing does.
I am adding an Oklahoma Joe's Highland offset smoker to my arsenal. I'll be modifying it with seam sealant, a heat/smoke baffle, smokestack extension, and lid seal/latches. I'm really excited to play with the larger format and fuel opportunity.
I'm open to well-intended advice and critique, and I hope I can add some well-intended advice and critique myself.
