Hi, everyone.

Just want to introduce myself to the forum.  I'm Devon, and I live just outside of The Classic City of Athens, GA, home of my beloved BULLDOGS!  Woof!!!

I have been smoking for 7 or 8 years.  First on a Smoke Vault, then on a Smoky Mountain... both upright, propane fueled, front loading rigs.  I enjoy smoking all kinds of things.... Butts, pork loin roasts, turkeys, chicken thighs, chicken breasts, tofu (for my vegetarian child), wings, etc...  I've never attempted a brisket, primarily because my smokers' sizes just haven't lent themselves to an entire packer...

The creative process is important to me.  I've been a homebrewer (beer, wine, mead, cider, etc..) for 20 years, and smoking really satisfies the same creative craving that I have with brewing.  I still feel like a total noob, but I'm able to provide some pretty tasty items for my family's enjoyment.  I'm open to suggestions and critique.

I just bought, but haven't assembled, an Oklahoma Joe's Highland offset smoker.  I'll be modifying it with a baffle, joint sealan, lid seal, smokestack extension, etc..... I'm looking forward to the freedom of the larger format and charcoal/wood fueled experience.

Devon, welcome to SMF!  You are definitely NO noobie.  Congrats on the new OJH and all the great experiences to come.  There are a lot of OJH owners here so any questions you have will quickly find answers.

Welcome from SC, Devon. It's good to have you here on this great site. Congrats on the OKJ. The learning curve is fairly steep on fire and heat management in an offset, but it's great fun. Just remember, an offset smoker doesn't like a precise temp. It likes a range of 30-50*, so don't worry, be happy.
