Hi, everyone.
Just want to introduce myself to the forum. I'm Devon, and I live just outside of The Classic City of Athens, GA, home of my beloved BULLDOGS! Woof!!!
I have been smoking for 7 or 8 years. First on a Smoke Vault, then on a Smoky Mountain... both upright, propane fueled, front loading rigs. I enjoy smoking all kinds of things.... Butts, pork loin roasts, turkeys, chicken thighs, chicken breasts, tofu (for my vegetarian child), wings, etc... I've never attempted a brisket, primarily because my smokers' sizes just haven't lent themselves to an entire packer...
The creative process is important to me. I've been a homebrewer (beer, wine, mead, cider, etc..) for 20 years, and smoking really satisfies the same creative craving that I have with brewing. I still feel like a total noob, but I'm able to provide some pretty tasty items for my family's enjoyment. I'm open to suggestions and critique.
I just bought, but haven't assembled, an Oklahoma Joe's Highland offset smoker. I'll be modifying it with a baffle, joint sealan, lid seal, smokestack extension, etc..... I'm looking forward to the freedom of the larger format and charcoal/wood fueled experience.
