Hi,

I'm Lewis, from my id you can probably guess i'm a conisure of fine junk. The older, usually the better. I'm 3/4 German heritage so wurst/sausage etc have ALWAYS been a love. Being a good ol country boy I also love some good ol fashioned sausage, biscuits and gravy. Everything got put into storage when I got married. We moved 4 times in 5 years. Needless to say, now that I can get it out, we're enjoying it. I've had a sidebox smoker for many years but after 7 or 8 failed attempts we just used it for grilling. Recently got one of the $40 cheapy smokers from walmart and am working on getting the mods done. I also have a amnps on the way. From everything I've read about it, I believe it will be pretty idiot proof which will be VERY BENEFICIAL for me. I do believe there will be a lot more smoking in our future if the amnps are as idiotproof as they seem to be.

thanks for the warm welcome. lookin forwerd to learning lots on here. LOTS of good reading too. found you while i was looking for a casing company that appears to be out of business. years ago, i used to get my hog casings from a place in cincinnati Oh. name of it was syracuse casing co. couldn't find em and old number now goes to i believe a bill collections place. anywhoo, y'all come up in my searching. never been a smoker fan after my many failed attempts so in all honesty i didn't check your site out too much to begin with. However, the more i read (past tense), the more informative i found it on EVERY realm of meat processing/curing/preserving, so after lurking here for 2-3 weeks now, i'm here to stay. 

I would like to compliment the owners/moderators site designers, whoever gets the credit, this site is VERY nice and easy to use. Even for a illiterate ol hillbilly like me. Don't know that I can contribute much knowledge wise, but I'm really enjoyin myself here.

First off Welcome lewis to SMF. You'll really like it here for there are a lot of really good guys an gals that would just love to help you with just about anything to do with smoking meat. Now if you need there is a 5 day E-Course that is very helpfull to newbies to the smoking world. Then you can always just ask question here and we will answer what ever you need to know. So the best thing to do next is go get something to smoke and if you need ring us up. Oh yea don't forget the Q-view or pictures. So after all of that.

thanks for the compliment on area. it is nice but sure does have its drawbacks too. similar to living out by midland or pecos. 20 miles from town and nothing in between. more green trees here and the houses are a bit closer together. been across TX on many occasions. you got your own little slice of heven too.

mballi, already got the 5day course. should be getting #4 in  a few hours. my amnps arrived today. the original plan was to be smoking some cheese and eggs today but that all changed last night. i had a my gout flare up, didnt get to sleep till about 6am. took day off work and taking it as easy as i can. when i come up with ?s, if i can't find the answer, rest assured, i'll ask. really like the fact of how friendly yall are. haven't seen ANY replys from anybody telling a newb to go search.
