My name is Matt, but you can call me Bigfish if you like. I have been smoking as a hobby for about 5 years. I am not bad at it (at least all my family tells me that but they could be lying!) I have mainly done the normal cuts of meat (ribs, brisket, pork butt, etc.) I would like to try doing other things like fish, bacon, turkeys, sausage, etc.

I recently moved from Macon, MO to Bismarck, ND. Before that, I grew up in Alexis, IL and went to college in Bemidji, MN. I had a Smokey Mountain propane smoker before I moved, but had to sell it before the move. Right now I am without a smoker, but am going to purchase an MES 40 soon.

I welcome any advice anyone has about smoking in general. I love to cook and love trying new methods. I will try and offer any help I can if anyone has any questions. I have a masters degree in biology so if anyone has any questions on that I could definately help!

I have only been a member of the site for a few days, but have already seen how many people are on here and more than willing to help out a fellow smoker. If everyone in the world were a smoker, world peace could be achieved with a nice rack of ribs!
 
I have already enjoyed your posts. Glad you joined us. I live in West Fargo right now but I grew up in Northern MN very close to Bemidji (Love that area) so I am very familiar with where you have and are currently living. WELCOME!
