I going through this Hatch Pepper seasoning really fast and wat to try to make some. I got some hot hatch peppers today and want to Dehydrate them than grind them. I guess the skin OK for this? Should I just cut them in big slices?

Here, in NM, if they are not roasted, they are usually hung in bunches (ristras) and dried in the sun.

I had a huge haul of jalapenos , and some sweet peppers a couple years ago .
I cut a slit in them , and used my MES 30 . Worked great . The mix of hot and sweet peppers made a great powder . I had so many , I still have some dried whole . Took a couple days in the MES to dry them .
Should say , Took a couple days to dry a smoker full . Ran the mes full of peppers for a week straight . Day and night .

I cut peppers up this morning. Man are these things hot. Maybe be to hot. I though I washed my hands good but got on my face. Had to wash several times. Gloves next time.

You wouldn't think peppers this big would get that hot. Don't think gonna be able to make that seasoning with them. Can use in place of cayenne pepper. Took shower and washed face good then open eyes. Feel the burn!
