Thanks to Eric, SmokinEdge SmokinEdge for the idea. Fried up some onions and hamburger. Why is it seems every time I get Roberts, tx smoker tx smoker taco seasoning out the bottle is empty?

I was trying to decide whether to make Eric's, John's or Roberts sauce in the morning. Well after working around the house all day decided on canned. Added a little to meat. Heated up some refried beans.

These cheese is really good as are these tortilla's.

Good call on layering the Hatch peppers Eric! Did another layer and topped with tortillas. Baked 35 minutes at 350.

This was really good and a great way to finish off Hatch Season.

Yes sir Brian, that’s eating well for sure. Nice stack of enchiladas. I think red and green Chile complement each other well together.

Thanks Eric. I am glad you mentioned layering the peppers. That really came out great like that instead of chopping them up.

I just cut in up. Man that thing was heavy! I got several give away bags! Should make some happy people at the river today.

Killer pan of Enchiladas Brian!! That looks so good!! I like the layering Idea. Enchiladas are one of the few things my wife cooks but they are always rolled. Layering looks Awesome! Kind of like a enchilada lasagna, Hahaha!
