This is a side item I use to get for a lot years from Del Taco. I ordered it as a side item no matter what I bought for lunch.

I was really craving it this week so I made myself some.

The only difference is I used Hot, not mild. I took this picture after I made the batch. The mix of the Queso cheese with the Hatch chilies is perfect for dipping with Frys or tortilla chips or anything else you would like to try. Just mix then microwave the amount that want to eat. Don't worry, no matter how much you make you will want more.
 
Next time you make it, I recommend trying frozen chilies if available, instead of canned.
Big difference in taste. No preservatives in the frozen.

from Miguel's/Brigantine in San Diego, if you are feeling ambitious.

If you want to make a much simpler queso blanco from American white cheese, diced peppers, and milk, the secret is sodium citrate, to help keep the sauce from getting greasy. Or at least add some roux for much the same effect.

Interesting. I used canned to get the same taste as from Del Taco but never thought about frozen. I have to admit I have never cruised the frozen isles looking for Hatch Chilies but there is a chance they do exist. I will look on my next trip and see if I can find them.

OP, good choice in store bought cheese dip. Best brand I've found.
An ole college buddy turned me on to Pancho's. He worked at the restaurant for a while.
