How to create smoke on a low temp? - Newbie

Hey everyone, new here and looking for some help. I have had my ups and downs with smokin' - which really makes it a good hobby! I have an Akorn smoker that I have been using for about a year.
I really have one consistent issue:How do you keep a flame and get smoke at a low temp (anything under 250 really). For example, today I am trying to smoke some Jerky and my goal is to keep the temp under 200 for 6-8 hours. Well I can get the temp there no problem, but there is absolutely no smoke, despite plenty of chips in the coals. I start with a good fire and bring the temp down. But, when I get to temp right and open it to put the meat on... No red, no smoke at all! It just seems like the flame dies when the temp gets under 250ish. The smoker holds the heat fine, but I just can't get any smoke.

Thoughts??
 
Welcome to the site. I don't use your type of smoker so I won't be of much assistance there, but I will bump your thread so more eyes get a chance to see it.

Will an amnps work in an Akorn? I don't see where you'd put it if your running with charcoal or lump.

I'm scratchin my head wondering why the chips directly on the coals isn't giving smoke.
Unless the smoke is actually so thin it isn't visible.

Maybe consider using a dehydrator to make your Jerky, or the oven turned as low as possible.

Which reminds me, I have to go tend to my dehydrator and get the next load in. :emoji_rolling_eyes:
