How should I store biltong in bulk

Hi everyone

I have started making beef biltong as a business and I am heading towards a larger scale and people are starting to like it.

I am having trouble storing my biltong products as some of my older batch was beginning to mold, the way I stored it was in vacuum seal bags with air in and a silica gel sachet however this didn’t seem to keep the biltong fresh for long.

Does anyone have any suggestions as to how I can store my biltong in bulk for long term?

After vacuum sealing your biltong, you may want to refrigerate or freeze it.

Most curing, drying, and smoking preservation methods don't inhibit mold growth much.
Refrigeration will slow down mold growth and freezing stops it.

I have just vacsealed with a chamber sealer and thrown it in the fridge. I have some in my fridge that I forgot about that is over a year old. No mold on it but I'll probably chuck it anyway. PS Welcome to SMF !
