How much smoke time for venison summer sausage

After drying how much smoke time should I give Venison summer sausage. Would smoke until it reaches temp be too much
 
Smoke will only penetrate so deep so as long as it’s up to temp you’ll be fine
 
Being its venison and depending on your fat content take the IT to 162
Its only going to take on so much smoke.
 
3 (+/-) hours of smoke will get it done. Smoke is not needed but I do appreciate the added flavor.
 
I have a smokehouse and I do not think smoke penitrates the fibrous casings. It smells nice coming out of the bag from the freezer later on though.

I smoke low at 120 for two hours creeping up and finish under 175 and and IT of 145 for 10 - 15 minutes. No need for an ice bath. Just open the door and cut the heat.
