How long will meat keep?

OK, Scott. I am looking at the Export Rib for Standing Rib Roast from the Restaurant Depot. I will be picking them up on Friday and putting them in the freezer then. Would I be better off freezing them in the original Cryovac or should I remove them and put them in Foodsaver bags? I will be taking them out of the freezer on Saturday night, the 15th, and smoking them on Wednesday, the 19th, morning. It is a fairly expensive piece of meat and I really don't want to screw it up.

I left all the briskets I bought in the original cryovac. 3 of them I thawed out slow in the refrigerator over the course of 4-5 days over a year after I froze them. Not an issue with one of them. As long as the cryovac isn’t leaking I’d freeze it the way it is.
