After a good cook that ends at midnight, will a brisket still be OK wrapped in a cooler at 12 noon the next day? Since February I've enjoyed a new Grilla Grills pellet grill, the smaller tailgate version of the Silver Back, The Chimp.

Welcome Nate! If you want it Hot, 5 hours is about all a cooler will give. At 12 hours it will likely be slightly warm or ambient. Options? Start later, line the cooler with 200°F Bricks or hold at 150 in your Oven. Regardless, wear gloves to handle the meat when wrapping g. Work quickly, as in have everything ready to go. Dumping a pot of Boiling water in the cooler will pre-heat it to hold longer. Additionally, if you like your Brisket at 195. Pull the Beef and wrap at 185. All that time in the cooler or Oven will finish the cook...JJ
