there have been a lot of great wing on here and I have  taken a liking to the injection method i borrowed from someone on here. so i thought i give back something good.

 my family likes it mild so i go with 2 parts garlic herb butter and 1 part franks buffalo sauce. i inject the wings let them soak for a while.

I coat them with a rub:

windy city sweet and tangy chicken rub.
  • 1 TBS Fine Sea Salt (reduce if used on brined poultry)
  • 3 TBS brown Sugar
  • 2 TBS Ancho Chili powder
  • 1 tsp Ground Pepper
  • 1 tsp granulated onion powder
  • 1 tsp granulated garlic powder
  • 2 TBS Paprika Hungarian
  • 2 TBS Tomato Powder
  • 1 tsp lime juice powder
  • 2 TBS honey powder
  • 1/2 tsp coriander ground
  • 1/2 tsp oregano ground
  • 1 tsp ginger ground
after cooking over apple wood/lump blend at about 275. they come out tasty and mild. a little zing not burning.

so for my friends that want a little bump up in heat but not killer. i made this. it could use a little tweaking but a great start. even if i'm out i'll get chicken tenders, come home and put this sauce on them.

Windy City Wing Sauce
  • 1/2 cup Franks red hot buffalo wing sauce
  • 1/4 cup Butter
  • 1/4 cup bourbon
  • 1/4 cup sriracha
  • 1/4 cup ketchup
  • 1 TBS garlic powder(or a few fresh cloves)
  • 1/4 cup apple cider Vinegar
  • 2 TBS worchestershire
  • *****
  • optional:
  • 2 tsp ground Black Pepper or white pepper
  • 2 tsp fine sea salt
