Trying something different today.
Using Owen's BBQ Chipolte Wildfire Mix with some added flavors.
3lbs ground Elk
2lb ground Poke
4oz of Chipolte Wildfire Mix
1/3cup Water
1 tsp Cure 1
4oz SBR
2oz Srirachi Sauce
Mix well, stuff into 21mm Collagen. Hang to dry for a bit.
Put these in the Bradley at 130 for an hour to dry. Set up the Auber PID and ran 140-170, bumping 10 degrees each hour. These got 3hrs of Hickory smoke.
6hrs later, we're done. I don't ice bath my sticks.
Gonna let this mellow out for a day in the refrig. QC sample was outstanding!
