Now the BIG Question! Do they taste Anything like Shickhaus Franks???:D I have been living in PA 27 years and tried every local brand of hot dog I could find. Nothing came close until recently I been able to get Sahlen's out of NY that are fairly close, using some of the same seasoning. Unfortunately the availability is hit or miss. However, If I could make a better than reasonable facsimile of Schickhaus, I would be in Fat City...JJ

I would say they are close not as salty but,finishing in the water bath may have cut my salt down a bit.

Collagen Have a better bite IMO taste seems to be better also.

Those hot dogs look great! I made Discos PWE dogs last year with collagen and was real happy with the way they turned out.
I will definitely have to make them again.

Craig Thanks I did a few pages of reading before doing these.I will be making more in the spring so I can finish in the smoker.Have to order some more casings

Looks great! Generally am not a big fan of hotdogs (store bought ) but these look tasty. Am sure taste a lot better too. Got to try some. The grandkids will like them I'm sure. Thanks for sharing. So many sausages so little time.!

Thanks we are very happy with the taste,going to order more casings and make a bigger batch
