I've been cooking with a WSM for a few years now and have been thinking about giving an offset a go. The models I'm considering are the OKJ Highland (with the baffle/convection plate and gasket mods)....vs. the Horizon 16 Classic. I've searched online and found separate reviews, but just curious if the Highland is worth the extra cash (i.e. better build quality, better heat distribution/retention, etc). Made in the U.S. does carry some weight with me....but in the end it's all about the meat!
Looking for something that will last me for years.
