Holy Trinity and Chipotle Chicken Soup

Did this tonight, thanks for posting. I took a few of my own liberties, too friggin cold to smoke or grill at teen temps. I used the Forman to grill the chicken. I also added carrots to the mix, some cumin, worcestershire sauce and a little liquid smoke.

In the last 20 minutes I added riced cauliflower and a bit of half and half., was very good. I can see next time some sausage would be a great complement to this soup.

Looks good to me just the way it is. Not sure what your restrictions are, I have been making soup with white beans lately with no rice, or pasta.
 
Type 2 diabetic, I liked the added bulk of the riced cauliflower, use it when ever I can. No criticism to the OP recipe at all, it was a great write up.

The good thing about the cauliflower is you dont have to make the entire pot with it, you can add it each day and it wont get soggy.
