Made some summer sausage & cheese to give to friends over the holidays. Used all beef 80/20 with a backwoods kit. Came out ok, but I feel it’s missing something? Maybe peppercorns or mustard seed? Some kinda tang is missing. All in all though not too bad for a second go round

Looking good,, I need to try the EAC on the commerical blends and see how it turns out,,,get some of that tang.
 
Looks Good.
I like to use/ add mustard seen and coarse ground black pepper. Fry up a test patty to get an idea of what it will end up like and then go from there.
 
RTT, Your SS looks good, I use Fermento to get the tang you were looking for.
