I am going to order the silicon grommet for the thermometer probe from Weber for my 22.5 WSM
But does anyone know what size hole I have to drill?
 
You can simply buy an assortment packet of rubber grommets from your local auto store. Then you can measure what the best size drill bit.
 
If it's the WSM grommet, the hole you need to drill is 1 1/4". A hole saw works best. The grommet is a bit tricky to get in but it will go.

I've a installed them on all my Mini-WSM's and my 18" WSM.
