Hi,

I'm Frank from Issaquah Washington. I recently bought a electric smoker just to experiment with smoking meats before getting a pellet smoker. I've been reading this forum for about 3 weeks now. 

More than anything, I'd like to try out different recipes and tips. My first time came out really bad but I had a good laugh. I currently have spareribs in the smoker right now. 

My first question so far is about sauces. I mixed one of the recipes on here and it had a really strong vinegar taste and smell. Is that normal?

Sounds like you made up some Carolina Style sauce, it does have a vinegar base and flavor. You can cut some of the strong flavor by adding some sugar.
 
Welcome aboard Frank. Glad you found us. You're gonna love it here. Lots of great infomation and advice. Not to mention the folks are very friendly and always willing to share. One of my best friends lives fairly close to you over in Maple Valley. There are many different kinds of sauce but all have a base of either tomato, vinegar or mustard. NC is famous for their vinegar based sauces, some being stronger than others. This sounds like the type of sauce you're describing. If it's too strong of a vinegar taste you can always adjust to your liking. Again,
