  1. Hey new to the sight my name is Wes Ive been smoking meat for about 4 years still learning a lot. I'm currently smoking with a gig Jim Bowie smoker. I have a few questions I just got my pellet smoker used 3 times the third time It kept temp really well but my ribs come out just ok. It seems like the pellet smoker should be set at a lower temp than I'm used to with charcoal?

    welcome to the fray.....nice rig that Jim Bowie, should have posted a pic of it. I considered it before getting mine but decided on the Char Griller pellet smoker 'cause of the price point & bigger cooking surface. Many pellet pushers here as you are probably aware of and there is a pellet smoker group you can 'join' if you wish. Just be aware if you post a question or thread in that group only group members can answer you.  C ya around......Willie
