Just dropping in to introduce myself.

I have been reading many threads from this forum over the past several years seeking: food smoking process, differing methods, opinions, food safety and more. It was finally time to join and I'm glad to be here!

I am enthusiastic about the due process of self-made food & beverages, which includes everything and anything smoked in a chamber . Since I only have so much available time I settled on a pellet grill in 2020, but have always had some sort of smoker ... since 2003 ... I've had a propane smoker from Cabelas and an electric MasterBuilt cabinet that used chips. I also brew beer/wine, make sausages, jerky and use a lot of venison due to my deer hunting addiction.

Glad to be here and look forward to learning more ... :)

Welcome Ray, I am just a tad north of you in Adrian, Michigan. Actually just spent some time in Toledo Hospital!

Hey there RG ! Thanks for the welcome. No, I am not related to that group, but next time I am down that way I will definitely have to plan a stop to get some of their bbq… looks amazing on their website.

Someone mentioned that we should share pics ... here are some pics from my brisket cook last weekend ... had a power outage overnight which sent me into a panic due to the grill being off for nearly 3.5 hours, but this thread helped me immensley and I pushed on with the cook. It turned out good .... and more importantly no one got sick.
