Hi everyone...I am new here as of today and need some help on a rub for a 7.23 pound pork loin

I am taking this loing over to my friends house on friday morning to smoke it all day,I am currently having a custom smoker built for me and really am excited to be on this site....I have a 7.23 pound pork loin and really would love some tip tricks rub recipes and pointers for smoking it,I did go buy a 1 1/2 pound pack of thick cut applewood bacon to wrap it in....just need help on a rub...thanks and God bless...Josh

e man's pig rub.

1/4 c. paprika

1/4 c. onion powder

1/4 c.garlic powder

1/4 c.course ground black pepper

2 tsp celery seed

2 tsp cumin

1 tsp nutmeg

1 1/4 c dark brown sugar.

 This is a sweet / no salt rub .

 it has very little heat but lots of flavor.

 feel free to add as you see fit.

Here's my general rub, I cut back a bit on the black pepper.

  • 1/3 cup coarse salt (kosher or sea)
  • 1-1/2 cup (packed) Sugar in the Raw(brown sugar is ok)
  • 1-1/4 cup paprika
  • 1 Tbsp freshly coarse ground black pepper
  • 2 Tbsp garlic powder
  • ¼ cup dried onion flakes
  • ¼ cup onion powder
  • 1 tsp cayenne pepper
  • 2 tsp chili powder
  • 2 tsp coriander or Ginger
  • 1 Tbsp rosemary

Mix everything
A lot of individuals use "Sugar in the Raw" (Turbinado Sugar) because it stands up to heat better than "Brown Sugar" on longer smokes, such as Butts. I have used both and have had no problems with the brown sugar, stay away from white sugar for smokes.

This is the mop I have been using lately.
I have been very happy with the results


  • 3 cups Apple Juice
  • 2 cups Apple Cider Vinegar
  • 1 cup Southern Comfort




  •  pour all ingredients in sprayer and refrigerate
Substitutes -

Red Wine vinegar in place of Apple Cider Vinegar

Southern Comfort in place of Captain Morgan Spice Rum

Apple Cider in place of Apple Juice

I purchased a garden sprayer from Home Depot for 10 bucks and it works great. I just fill it up and keep it in the refrigerator until I am ready to smoke.
The adjustable nozzle is great for laying down a good bit of mop in a simple squeeze without blowing away your rub.

I see you got a couple of good ones already. Take those and make them your own - be careful with taking advice from Bear, he has a serious addiction

Here are a few I tried when I first started and changed to my own personal preference

Carolina Rub:

•2 tablespoons salt
•2 tablespoons sugar
•2 tablespoons brown sugar
•2 tablespoons ground cumin
•2 tablespoons chili powder
•2 tablespoons freshly ground black pepper
•1 tablespoon cayenne pepper
•1/4 cup paprika

Memphis style rub:

4 teaspoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons fresh ground black pepper
1 teaspoons cayenne

Basic Pork Rub:

•1/3 cup paprika
•1/4 cup sugar
•3 tablespoons black pepper
•2 tablespoons salt
•2 teaspoons dry mustard
•2 teaspoons cayenne
•1 teaspoon white pepper

Best Odds Rib Rub:

1/3 cup paprika
3 tablespoons dry mustard
3 tablespoons onion powder
3 tablespoons garlic powder
2 tablespoons ground basil
1 tablespoon red pepper
1 tablespoon black pepper
1 tablespoon salt
Add 1 tablespoon brown sugar to sweeten

If this is your first loin, I have a suggestion. Try smoking it with no rub, just wrap it in bacon to keep it moist & see what it tastes like. Then you have a baseline flavor you can expand on.

This is a good rub that I have used and found works really well with pork loin:


Book: Haskett Family Favorites Cookbook
Chapter: Brines, Rubs & Sauces

1/2 cup light brown sugar
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon ground thyme
1 tablespoon paprika
2 teaspoons cayenne pepper
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
1 lemon zested

Combine all the ingredients in a small bowl. Rub on meat. Wrap meat in plastic wrap and refrigerate over night.

Yield: about 3/4 cup
