Hey Ya'll

I'm Cale, a wanna-be farmer from Upstate SC.  I was pointed here from another online forum.  I'm full of Sweet Tea and Noobie Questions :)

Firstly though a little history.  The fam and I moved outta the city almost 3 years ago to a little farm.  Since then, we've run about 100 Meat Chickens through our 'tractors' with pretty good success.  We also did pretty good with a dozen or so layers.  I'm a country boy, but not a 'real' farmer - yet.  Past growing our own food, I'd like to one day join the local food economy.

I have a friend, already 'there'...and while visiting him back last Summer, he tossed two piggys in my pick-up bed, and the rest is almost history.

They aren't pigs anymore...they are Top Hog + or whatever you'd care to call a 400+ pounder. 

Therein lies my reason for showing up over here

Next Tuesday I take my hogs to the local processor.  He will cut and make sausage/hams/etc... but he can't do cures or smoke (no bacon). 

Yep, Bacon, Cures, and Smoke...I've been reading around and think I've decieded to build a little smoker (the build your own smoker from U-Conn). 

So what is a the Pops Cure?

Can I freeze pork bellies then thaw and cure? (lots of similiar ?'s here)

sorry the kids are distracting me gonna run for now.
