Hey Steve: My Take On Your Bacon Wrapped Chicken (w/ Pics)

Steve....thanks for posting your original thread on this. It has garnered a lot of attention and seems to have started a whole new movement in SMF :-) In all honesty, your posting is the personification of everything that's great about this forum: sharing ideas and inspiring others to do different things.

I made mine last night but had to mix it up a little bit. My wife is allergic to chicken so I had to use turkey. We only had cutlets, not full breasts like you had, and we'd worked in the yard all day so time did not permit to smoke them. Cooked them on the grill with a small chunk of pecan wood in the smoker tray. Didn't get a lot of smoke but that's OK. They were still absolutely fantastic!! Most importantly the wife said it was one of the very best meals I'd ever cooked....and that's saying a lot for how good they were.

Cutlets laid out with a couple of green onions, some Feta cheese, Himalayan pink sea salt, and fresh ground black pepper

The cutlets were thin so I rolled them up with all the goodies inside and wrapped them with home made pepper crusted bacon

On the grill after the flip. Bacon is crusting up nicely.

Done, off the grill and ready to plate. These look REALLY good!!

The Feta and green onions really complimented the turkey and added an exotic dimension to the overall flavor. They were not real strong or overpowering but sure did add complexity. This meal WILL be done again in the very near future :-)

Many thanks once again Steve. You've added a fantastic meal to our menu that will be enjoyed for years to come, and most likely done for dinner parties where we are entertaining friends. Yep...it's that good!!

You're welcome! And now I have to give your take on this a try. But I'll stick with chicken though. The wife doesn't care for turkey. I've found this site to very friendly. With everybody helping each other out. When I make my chicken dish again I'm going to stick a spear of smoked cheese in it. That could be interesting.
 
Feta cheese is like bacon. It can be used in so many recipes. I'm wondering if blue cheese can be used as well. Has anyone smoked blue cheese?

Wow looks amazing, I to will be doing this but like any one who loves to cook I to will be adding a twist, what it is just as of now not sure, but pictures will be posted for sure!
