I'm a welder here in wisconsin. Love fishing and cooking! Stole a brand new in the box gmg DC from my brother when he didn't have room in his garage after buying a sweet walleye boat. I've been running pork shoulder and turkey through it like a short order cook lol. Wanna try brisket and was curious about hickory for pellets.

You'll be fine with hickory.  Oak or mesquite are others that you may want to consider as well, as they impart a stronger flavor that are well-suited for brisket, especially mesquite:  a little goes a long way.  Fruit woods don't fare as well, as are best left for pork, chicken, and fish.  My $0.02
