Hello,

Looking forward to learning from everyone! My wife and I started a market farm a couple of years ago and we are adding American Guinea Hogs, a small heritage breed. So an about a eight months from now I'll want to smoke our own hams and bacon. So looking to learn about cold smoking.

About 20 years ago I ran a smoker at a bbq joint in Little Rock so Iwant to buy/build a hot smoker and relearn that too.
