Hexclad Pan Review, Real World Real Time - Lots of Pictures!

Alright,help me out guys.
I bought a griddle to replace a GreenPan that seemed to stick a lot.
I’ve not had any better luck with the HC.
I always pre-oil, keep at med to med-hi (induction), it does not heat evenly across the griddle.
What should I do differently?
I would wash it in the dish washer (or wash it with really hot water) then season it, ie get it med hot then wipe down with oil and let heat for 4-5 mins…..then let cool.

Then when using pre-heat dry then wipe with oil or butter before. Be heavy on the butter or oil for the first couple of times after.

Yes, will try again, maybe a few times like CI

Yeah, will season again.
Have the most sticking trouble with pancakes, maybe just not enough oil in the mix and on the griddle.

The seasoning isn't a seasoning like a CI pan, so not in the oven or at high temp. It is simply getting the pan medium hot (under 300 degrees surface temp) and coating it with oil to "seep" in the surface openings. It only takes 3 to 5 minutes.

For pancakes take a cube of butter with the wrapper end cut off and then run it over the surface to create an "oil" layer prior to the batter. If you put batter on it dry it will stick.

Provided the pan has its AL core the heating across the pan will be a function of the heat source as well. If you have induction then I'm suspecting it's a contact thing, i.e. not being uniform across the area of the pan so certain parts are heating quickly. Try giving the pan a "warm" up cycle to allow the temp to move around the core.

It arrived after I had left for the day and the receptionist signed for the box. The problem is that it was box 1 of 2. The second box wasnt delivered with the first one and the tracking says "delivered" I contacted Hexclad and was replied to very quickly. With some back and forth and pictures sent from me, it was escalated. I am to wait until Nov 25 for the delivery of the second box and if that doesnt arrive by end of day, I have to open up a claim. I was reassured it will either show up from the courier or it will be reshipped. If I need to, I caneven pull the footage from the cameras at work to show only 1 box delivered.

I did make and omelette with the pan on Sunday morning for the wife and I and it performed as expected after the pan conditioning procedure was completed.
Cross your fingers for me.

Hope you get the second box free from any more hassle…..just know years from now as you use them you will have forgotten all about it!
 
Momma wants new pots and pans for Christmas. Looking at their black Friday deals and I know very little, aside from reading here, about them. They look great and sound wonderful but I am also a bit cheap. I am looking at the 12 piece bundle for $600? I feel like I am crazy for that. I trust you people and you all seem to love them. Is there anything you don't like???

Can't say I'd use the pan lids that much but no matter what deal you look at they all include those pan lids. I'd probably find some out of the way place to store the 3 lids so they wouldn't take up space in the kitchen.
 
My wife doesnt care for them at all. We have the fry pan 3 piece set only. I think they cook fine. I don’t care for them cooking eggs though. Finish has come off or wore in a few places. These are the previous generation coating. Cant say about the new finish. Our whole set of all pots and pans is being replaced for our Christmas gift to each other. We went with Made In for the pots and one pan; ceramic coated stainless steel. We went with Misen for the fry pans; non stick carbon steel and a 5.5 qt enamel dutch oven. They start showing up today. Have to give them credit for a fantastic marketing campaign and Chef Ramsey as a figure head.
 
Not sure which way they will go now that they lost a lawsuit, may end up as a class action before it’s all said and done

You know they have lifetime warranty and would replace any failing of pans integrity.

As far as I know the lawsuit is all done ie we got a claim letter if we wanted to get some $$ back, it was like 5% or something. I didn’t send mine back because we a very happy with them.

All the new pans are the TerraBond or a ceramic that is rated at 900 degrees. I’ve only had the new pan a couple of weeks but so far it is more non-stick than the OG (will do eggs very nicely) so time will tell for longevity but so far I’m impressed!

As a side note many of the food network shows have now picked them up for their competitions as well.

If you're not crazy , you're close . I'm not against Hex clad at all . They seem to work , but My Son still uses his cast iron more than the Hex clad . However , he's not cooking everyday either , and some things are better in the cast iron .

Just the way I approach stuff , buy one and see what you think . Better yet , get her involved .
If she wants the Hex clad and you have the money buy them .
Spend $600 on a set and have her not like them ,,, nope .
That being said , I'm about $500.00 in on 2 woks , 12" skillet and a 3qt saucepan , all with lids .

We bought several years ago at the Tulsa state fair...probably 10 years or something like that...? In the last year they have started sticking, and some of the coating is starting to wear off. We have been unable to find the cause of this. If I remember correctly, they come with a lifetime warranty, so we may have to look into getting them replaced, if I'm remembering the warranty part correctly.

It is a big commitment for sure, but at 100 per pan and lid it’s not really more than any of the “name brand” ones. Like I’ve said previous we have our stainless and the Hex and we aren’t going to give either up soon.

We started with a single 10” fry pan and used the crap out of it before we spent 600 bills

Right . It looks like good stuff , but I don't use it . The stuff I did buy was gift list stuff for each of the kids .
I'd love to sear a steak in that 12 " skillet , but I bought him a carbon steel pan a few years ago .
I used it to do a breaded and fried chicken breast . Right at the end of the cook , I squeezed lemon over the top to make a sauce . Not only did it strip the seasoning off the pan , it ruined my supper . I still haven't forgot the look on his face when I told him .
So I'll just leave his stuff alone . Lol .
