Hexclad Pan Review, Real World Real Time - Lots of Pictures!

I started moving to stainless steel and carbon steel pans a while ago. My wife prefers non-stick because she had hit/miss results with both.

I got her a set of Henckels Hydrid pans ($80 @ Costco for an 8-10-12 inch set), which are slightly thinner than the Hexclad. So far I'm impressed. Less preheat than stainless or carbon, and with a little fat beautiful non-stick. Nice browning, too.

Time will tell how long they last.

I looked at those this past week and they look nice. The surface is textually different than the HC. The HC stainless portions are much more pronounced, i.e. the coated sections on the HC are like valleys in a noticeable way. However, if the Henckels are a polymer infused anodization (which is what I believe the HC are) they should do well. Additionally, as you noted they need some fat or oil and then they do magic things. PS we still have and love our stainless try ply pans as well.

With all the small indentations how do they do with something like fries eggs?

They fry and egg nicely, but you have to use butter or oil. You also have to break them free with a slight push or jiggle once they set, but they give a good fried edge. I do my sunny sides up and "one plate" scrambles in them (get nice browning on the bottom as well). However, they are not a performer for scrambled eggs or whipped eggs (like GR eggs) (ie the eggs absorb the oil and some sticking can happen). As I said above in the review, a traditional non-stick is the best for eggs. My wife does all her eggs in the NS.

My wife just fried 3 eggs in the 8" Henckels hybrid. She's had to learn to use more butter than she has in the past, and use a short pre-heat (30 secs), but fried eggs slide right out. Here's the 8" she just used.

A buddy has ordered them a while ago and I asked him yesterday how they were to work with. He still hasnt got his order LOL .

Do you have any of the pots? Does it make much of a difference? Pans I can see for sure but are the pots worth the price?

To jump in here, I bought an 8" Anolon pan and a 2qt HC pan back in November to compare. Apples and oranges, but I learned something out of it. The Anolon pans only have the hybrid feature on the cooking surface with a nonstick surface on the rest of the pan and a polished bottom side. The HC pans have their hybrid feature throughout the interior AND exterior. Needles to say, the Anolon pan is relegated as a backup.
Since then, I've added the pans that we use the most, but now have the 5.5 saute pan, 12" fry pan, 1qt, 2qt, 3qt saucepans and an 8qt pot. I've read that HC changed their non-stick areas to a ceramic substance around Nov of 2024. It's a shinier appearance and super slick. Some of the most even heating pans we've ever had. And the sear we get on steaks is phenomenal. Each of our pans wind up with some kind of gummy thin substance on the bottoms, but Bar Keeper's Friend takes it off, and doesn't return. We are very satisfied with our purchases.

There were some lawsuits on their original non stick coating. Perhaps that drove the chance

Yes we have a number of pots, the wok, and a huge 14” sauté pan. We like them all! From a cooking or heating side of things the pots are about like out tri ply stainless but when it comes to cleaning them or working with sticky stuff they still beat them out.

I haven’t heard if the change of the coating, but all out pans are about older than that. I do know that they had a patent on their coating so not sure the change but either, I just know they work!

Like I said above I thought they had a patent on the coating so not sure what would have changed. I do know that GR has gone all in with them. He now gives them to his restaurant make over shows as well. I know ours are still going strong and showing no signs of wear. One did find the sharp point (just after I sharpened the kitchen set and got gamed in via a loaded sink. It cut a little line in but just exposed stainless and zero flaking or anything like that. The coating is bonded. I’ll grab a pic when I remember. Oh it would have cut a stainless pan as well…..
 
Well you learn something every day, it looks like it was a lawsuit about having PTFE in the coating so a change to ceramic…..now peps are all worried about nano particles of titanium dioxide from the ceramic coating (at least that’s what the interweb says)……these peps better read the label of some of the many coffee creamers out there….. I’m now going to need to buy one of the updated ones just to see!

Here are some details from HC web page they call the coating TerraBond now and it’s good up to 900 degrees……

My only question was it the lawsuit or did they just change as the TerraBond was what was released on bbq pan with along with the 900 degrees limit. So now it looks like they are all TerraBond and 900 degrees……

In action today. We just bought the smaller version. We have had this one for almost three years and still love it. It shows no wear and is used several times a week.

I did look to see if I commented yet, so here goes. Picked up a 12 piece set. could not be happier with them! bet pots and pans I have ever owned by a large margin!

if you are in the market, they are well worth the money! Nothing sticks. did eggs, chili, fried breaded pork chunks, everything just had oil droplets left when finished.
 
This is great information, my wife has been requesting these for her Birthday and Christmas for the past year...maybe it is time I listen to her and get her one. I am leery of something that is so heavily promoted on Facebook..... But it looks like these are legit.

I was skeptical due to the ads and all too. But after reading this review and researching they are 100% legit!

FWIW, Costco has traveling demonstrations for Hex Clad items right now. You might save a little $$ on them. Check their website for Special Events at stores near you.

Also watch the sales at Hexclad. they are on sale often and have free shipping...or they did...I kinda think they ship for free always but who knows.

No special events near me but I did see this option avaialable.
8,10,12 inch pans plus 12 wok for $499 cad. the same 3 frypans alone are $529 on the HC site. Further reading is that the costco versions are the PTFE pans.
Ironically, I cannot find anywhere on the site the term PTFE or Terrabond
EDIT found Terrabond on the FAQ page.
